“At the beginning I made cuggiulelles because they reminded me of the taste of my childhood and I wanted to keep this recipe in the family. It was by sharing his Proust madeleine with his friends and feeling their enthusiasm that he realized that the biscuit imagined by his great-grandfather could appeal to everyone.
In his laboratory of ten square meters, Julien “biscuit” in the old style, by hand. He tinkered with notched wheels to cut several cookies in a single movement. "I am very attached to the gesture and my roulette because it proves the artisanal side of my production" he says.
