In the little known places Tre Berte and Montallese, respectively belonging to the municipalities of Montepulciano and Chiusi, are the lands of "I Tre Capi". A few steps away we can find the "Sentiero della bonifica", a cycle path that goes along the Canale Maestro della Chiana from Chiusi to Arezzo, where it flows into the Arno.
We are in fact in the Val di Chiana, a tarritory famous for its fruit and its vegetables, a land that we owe to the Florentine genius personified in Count Fossombroni and Grand Duke Peter Leopold II of Lorraine (but I of Tuscany), the only two capable of harness the restless waters of the Clanis and reclaim the valley.
Centuries of organic substances have therefore accumulated in this land, with amazing results: the most brilliant example is the Aglione, the second white giant in the area after Chianina breed, capable of reaching almost a kilogram of weight here. It is in respect of the environment that we grow our products.
We are in conversion for the organic regime and we can not, nor do we want, use fertilizers, herbicides and fungicides that are not absolutely natural. What we produce is how you can see it, it doesn’t hide
anything: it has exactly the taste that it must have. During the processing, in the end, we do nothing but assemble our precious stones creating unique jewels, bringing quality and tradition on the table: it is a tradition in which you can sink the spoon.
