We settled at the Ferme du Cos, at Laurède in 2007. Since then we have refurbished the old farmhouse where we delight in cultivating our vegetable garden, raising our poultry, going out fi shing and hunting – in short, making the very most of our environment. Naturally, when yields were good we turned to making our own preserves.
Our Approach
4 basic principles lie behind our way of doing things:
• Absolutely all of the raw materials we use are fresh. No frozen ready made, re-hydrated dried foods or products in brine for us; we receive our ingredients fresh and work them free of any preservative, colouring or flavour enhancer. Preserves 100% home made…
• We do everything we can to find local raw materials within a radius of about 150 miles around our workshop; we select these products from growers, fishermen and local SMEs we know well.
• We work in small production series, using tools on a human scale so as to guarantee work of the highest possible level of quality.
• Finally, we market our products as directly as possible so we have constant feedback as to the quality of what we make.
