Instinct from the beginning guided us towards the biological method and the enhancement of the indigenous vines present.
All the grapes that we use to produce our wines are personally processed from pruning to harvesting, which takes place strictly by hand in 20 kg crates. immediately bring to the cellar to preserve the health and integrity of the grapes; also with thinning we keep the yields per hectare far below the production regulations with the main objective of the quality of the raw material.
Autochthonous vines, organic method and attention to the work in the vineyard are the principles that we find in the cellar and that guide us in trying to work the must with the most natural methods possible to enhance the characteristics of the wines: for example fermentations take place without adding yeasts , we do not use oenological adjuvants except a limited contribution (much below the maximum limit allowed by the organic protocol) of sulfur dioxide, no clarification and almost no filtration. In conclusion, passion, respect and listening to what nature gives us is the way we try to follow in everyday work.
