"My Peotenia farm is located in St Jean Le Vieux in the Basque Country. I decided to take over from my parents because this job fascinates me and I wanted to continue my life in the Basque Country, on land that is dear to me.
Anxious to enter into agriculture that respects the environment, I converted to organic farming in 2011 and devote myself to producing organic sheep and corn.
My ewes are fed exclusively with hay, grazed grass and corn from my organic farm. For 6 months of the year we move the sheep to Iraty, and in October, we bring the herd back to the farm for lambing.
We produce our own corn, a Basque large red corn, also called Arto Gorria. This peasant corn has been cultivated since the 17th century in the Basque country. Before the harvest, the most beautiful corn cobs are selected to serve as seed for the next year.
The corn is then naturally dried on the cob and ground with a stone grindstone. This oxidation-free grinding and vacuum packaging preserves all its character and flavor.
